Venezuela Cooking Recipes

Venezuela was one of the three countries that emerged from the collapse of Gran Colombia in 1830 (the others being Colombia and Ecuador). For most of the first half of the 20th century, Venezuela was ruled by generally benevolent military strongmen, who promoted the oil industry and allowed for some social reforms. Democratically-elected governments have held sway since 1959. Current concerns include: an embattled president who is losing his once solid support among Venezuelans, a divided military, drug-related conflicts along the Colombian border, increasing internal drug consumption, over dependence on the petroleum industry with its price fluctuations, and irresponsible mining operations that are endangering the rain forest and indigenous peoples.

Venezuela is slightly more than twice the size of California. The climate is tropical, hot and humid. It is more moderate in the highlands.

Arroz Con Bananas - Main
(Rice with Bananas)

Cooking Recipes Ingredients
1/4 t Saffron threads
1 T Vegetable oil
2 t Water, hot
1 pn Salt
2 c Rice, white, long-grain - -cooked
1 pn Pepper, cayenne
2 T Parsley - chopped
4 ea Bananas

Cooking Recipes Directions
Preheat oven to 300F. Dissolve saffron in hot water for 5 minutes - stir
into rice. Spoon rice into shallow casserole. Place in oven to dry
slightly.
Peel bananas - cut in half lengthwise. Heat oil in large skillet - fry
bananas until golden brown on both sides. Season with salt and red pepper.
Sprinkle chopped parsley over rice - arrange fried bananas on top.



Baked Snapper Fillets from Venezuela - Fish

Cooking Recipes Ingredients
2 tablespoons chopped onion
2 tablespoons chopped parsley
4 red snapper fillets or other fish fillets, skinned (about 1 pound)
2 tablespoons margarine
2 tablespoons all-purpose flour
1/8 teaspoon salt
1 cup milk
1 4-ounce can sliced mushrooms, drained
1/4 cup dry sherry
1/4 cup grated Parmesan cheese
Paprika or snipped chives

Cooking Recipes Directions
Sprinkle onion and parsley in bottom of 12x71/2x2-inch baking dish.
Arrange fish fillets in dish. Cover. Bake in a 350 deg F (175 deg C) oven for 30 minutes or till fish flakes easily when tested with a fork. Drain off any liquid that has accumulated in baking dish. Meanwhile, in a saucepan melt margarine. Stir in flour till blended. Add milk all at once. Stir in mushrooms. Cook and stir till thickened and bubbly. Cook and stir 1 to 2 minutes more. Stir in sherry. Pour over fish. Sprinkle with Parmesan cheese. Return to oven and bake, uncovered, about 5 minutes more or till heated through. Sprinkle with paprika or chives.
