United Arab Emirates Cooking Recipes

The Trucial States of the Persian Gulf coast granted the UK control of their defense and foreign affairs in 19th century treaties. In 1971, six of these states - Abu Zaby, 'Ajman, Al Fujayrah, Ash Shariqah, Dubayy, and Umm al Qaywayn - merged to form the United Arab Emirates (UAE). They were joined in 1972 by Ra's al Khaymah. The UAE's per capita GDP is not far below those of leading West European nations. Its generosity with oil revenues and its moderate foreign policy stance have allowed the UAE to play a vital role in the affairs of the region.

The United Arab Emirates is slightly smaller than Maine. It is a desert area with cooler temperatures in the eastern mountains.

Khameer - Bread
(Round Yeast Bread)

1 tablespoon yeast
2 cups wheat flour
2 cups all purpose four
3 eggs
1/2 cup sugar
1/2 cup powdered milk
1/2 cup oil
1 teaspoon ground fennel
1/2 teaspoon saffron
1 teaspoon cardamom
1 teaspoon salt
1 1/2 cups warm water
beaten egg and sesame seeds for garnish

1 egg beaten
1/3 cup sugar
3 tablespoons tapioca
pinch of salt
2 3/4 cups fresh milk
1/4 teaspoon saffron
1/4 teaspoon cardamom
1 tablespoon rose water

Cooking Recipes Directions
In a medium size pan, put the beaten egg, sugar, tapioca, salt and milk. Cook over a low heat stirring constantly to avoid curdling the egg.
Cook until thick and tapioca is soft - about 20 minutes. Remove from heat and add saffron, cardamom and rose water. Put in individual small bowls or one large bowl and serve cold.
