Samoa
New Zealand occupied the German protectorate of Western Samoa at the outbreak of World War I in 1914. It continued to administer the islands as a mandate and then as a trust territory until 1962, when the islands became the first Polynesian nation to reestablish independence in the 20th century. The country dropped the "Western" from its name in 1997.

Samoa is slightly smaller than Rhode Island. The climate is tropical with the rainy season from October to March and the dry season from May to October.

Supo Esi - Dessert

Ingredients
4 cups grated cup coconut cream
1 tablespoon sugar
1 cup tapioka starch
1 cup water

Directions
Pour water into grated paw-paw, add sugar and stir thoroughly. Put into a saucepan and boil gently for 10 minutes. Sprinkle taoioka starch a little at a time, stirring constantly to avoid lumps. When it's cooked, add coconut cream. Serve cold.
