| Pan de Maiz de Carnaval - Bread
(Carnival Bread)
Cooking Recipes Ingredients
1 cup sifted all-purpose flour
1 cup yellow cornmeal
1/4 cup sugar (or less to taste)
1 tablespoon baking powder
1 teaspoon salt
1/4 cup (1/2 stick) butter or margarine, softened
1 egg
1 cup plain or vanilla yoghurt
2 medium carrots, peeled and shredded
1/2 cup fresh, canned, or frozen corn kernels
butter to grease pan
Cooking Recipes Directions
Preheat the oven to 425 F. Sift the flour, cornmeal, sugar,
baking powder, and salt into a bowl. Cut in the butter until
the mixture forms little balls the size of peas.
In a separate bowl, beat the egg until frothy. Add the yoghurt,
carrots, and corn. Combine with the dry Cooking Recipes Ingredients. Pour
into a greased loaf pan. Bake for 20 minutes, or until a toothpick
inserted in the centre comes out dry. Cool in a pan.

Ensalada de Bacalao - Fish
(Salt Codfish Salad)
Cooking Recipes Ingredients
1-1/2 pounds bacalao (salt codfish), cooked and shredded
1 large potato, boiled, peeled and cut into chunks
1 medium Spanish onion, peeled and minced
1 avocado, peeled and cut into chunks
3 hard-boiled eggs, sliced
1 red and 1 yellow bell pepper, seeded and cut into strips
1 tomato, seeded and chopped
1/3 cup white vinegar
1 cup olive oil
salt and pepper to taste
Cooking Recipes Directions
In a serving bowl, combine the codfish with the potato, onion, avocado,
egg, peppers, and tomato. In a separate bowl, combine the vinegar
and oil and season to taste. Pour the dressing over the codfish
mixture and toss well.
