Puerto Rico Cooking Recipes

Populated for centuries by aboriginal peoples, the island was claimed by the Spanish Crown in 1493 following Columbus' second voyage to the Americas. In 1898, after 400 years of colonial rule that saw the indigenous population nearly exterminated and African slave labor introduced, Puerto Rico was ceded to the US as a result of the Spanish-American War. Puerto Ricans were granted US citizenship in 1917 and popularly elected governors have served since 1948. In 1952, a constitution was enacted providing for internal self-government. In plebiscites held in 1967, 1993, and 1998 voters chose to retain commonwealth status.

Puerto Rico is slightly less than three times the size of Rhode Island. The climate is tropical marine with little seasonal temperature variation.

Pan de Maiz de Carnaval - Bread
(Carnival Bread)

Cooking Recipes Ingredients
1 cup sifted all-purpose flour
1 cup yellow cornmeal
1/4 cup sugar (or less to taste)
1 tablespoon baking powder
1 teaspoon salt
1/4 cup (1/2 stick) butter or margarine, softened
1 egg
1 cup plain or vanilla yoghurt
2 medium carrots, peeled and shredded
1/2 cup fresh, canned, or frozen corn kernels
butter to grease pan

Cooking Recipes Directions
Preheat the oven to 425 F. Sift the flour, cornmeal, sugar, baking powder, and salt into a bowl. Cut in the butter until the mixture forms little balls the size of peas.
In a separate bowl, beat the egg until frothy. Add the yoghurt, carrots, and corn. Combine with the dry Cooking Recipes Ingredients. Pour into a greased loaf pan. Bake for 20 minutes, or until a toothpick inserted in the centre comes out dry. Cool in a pan.



Ensalada de Bacalao - Fish
(Salt Codfish Salad)

1-1/2 pounds bacalao (salt codfish), cooked and shredded
1 large potato, boiled, peeled and cut into chunks
1 medium Spanish onion, peeled and minced
1 avocado, peeled and cut into chunks
3 hard-boiled eggs, sliced
1 red and 1 yellow bell pepper, seeded and cut into strips
1 tomato, seeded and chopped
1/3 cup white vinegar
1 cup olive oil
salt and pepper to taste

Cooking Recipes Directions
In a serving bowl, combine the codfish with the potato, onion, avocado, egg, peppers, and tomato. In a separate bowl, combine the vinegar and oil and season to taste. Pour the dressing over the codfish mixture and toss well.
