Nigeria Cooking Recipes

Egusi - Soup

Cooking Recipes Ingredients:
2 medium tomato, ground
3 pounds goat meat (optionally, fish chicken or beef)
1 cup dried crayfish
2 cups egusi , ground
1 teaspoon dried red pepper, ground or crushed
1 tablespoons salt (optional)
1 medium onion, ground
3 tablespoons red palm oil
2 maggi cubes - chicken stock
bitterleaf, chopped (optional)
5 cups water

Cooking Recipes Directions
Cut meat in small pieces and place in skillet. Combine with water, onion, salt and boil for 15 to 20 minutes. Add ground tomato and onion and boil for 10 minutes. Add egusi and remaining ingredients, stirring as added. Cook for 10 more minutes, stirring constantly and serve with eba.


Akara - Side Dish
(Bean Balls)

Cooking Recipes Ingredients:
1 lb Dried Beans (White or Black-Eyed Peas),
1/2 tablespoon of Salt,
1/2 of tablespoon of Black Pepper,
1/2 Onion finely chopped,
1 1/2 Cups of Oil (Vegetable or Palm (Red).

Cooking Recipes Directions
In a 1-quart bowl: Soak 1 Ib. of Dried Beans (White or Black-Eyed Peas) in water overnight. Drain and remove any loose skins and put through a meat grinder. Add 1/2 tablespoon of Black Pepper, 1 tablespoon of Salt, and 1/2 of Chopped Onion. Beat in enough warm water to give beans consistency so that mixture drops easily from spoon. In a 9-inch skillet: Drop by teaspoons in hot Vegetable or Palm Oil and fry until golden brown on both sides. Akara is served as a Snack.
