New Zealand Cooking Recipes

Cashmere Chutney - Condiments

Cooking Recipes Ingredients:
1 kg. (2 lb) Green Gooseberries or apples
1/2 tsp Cayenne Pepper
125 g (4 oz.) Whole ginger, chopped and pounded
1 kg (2 lbs.) Brown Sugar
500 g (1 lb.) Raisins
50 g (2 oz.) Salt
500 g (1 lb.) Dates
Vinegar
1 clove
Garlic

Cooking Recipes Directions
Put apples chopped but not peeled and cored in preserving pan. Cover with vinegar. Cook until soft.
Add the cayenne, ginger, brown sugar, raisins, salt, dates, clove, and garlic. Boil half an hour. Put into bottles, cover, and keep twelve months before using.



Date Chutney - Condiments

Cooking Recipes Ingredients:
750 grams dates
400 grams sultanas or currants
500 grams onions
2 cups brown sugar
1 tablespoon salt
1 tablespoon dry mustard
1 tablespoon ground ginger
1 teaspoon ground allspice
1 teaspoon cinnamon
1/4 teaspoon cayenne pepper
5 cups Malt Vinegar

Cooking Recipes Directions
Chop dates and put with sultanas or currants in preserving pan. Peel and roughly chop onions. Add this and all remaining ingredients. Bring to boil stirring, then lower heat and simmer about l 1/2 hours or until the mixture is thick and jam-like in consistency. Stir frequently during the latter stages of cooking to prevent burning. Pack into hot, jars and seal, preferably with a non-metallic lid. Use particularly with curries where a sweet chutney is wanted.
