Mozambique Cooking Recipes

Almost five centuries as a Portuguese colony came to a close with independence in 1975. Large-scale emigration by whites, economic dependence on South Africa, a severe drought, and a prolonged civil war hindered the country's development. The ruling party formally abandoned Marxism in 1989, and a new constitution the following year provided for multiparty elections and a free market economy. A UN-negotiated peace agreement with rebel forces ended the fighting in 1992.

Mozambique is slightly less than twice the size of California. The climate is tropical to subtropical.

Frango a Portuguesa - Main
(Chicken the Portuguese Way)

Cooking Recipes Ingredients:
3 x 2 1/2-lb. Chickens
4 to 6 oz. Butter
1 cup Onion
1 clove Garlic
2 Tbs. Flour
2 cups Canned whole tomatoes
1/4 cup Sherry
1 Tbs. Salt
1 tsp. Red pepper, crushed

Cooking Recipes Directions
In an electric skillet (or large sauté pan): Brown: 3 2 1/2-lb. CHICKENS, cut up in small pieces and seasoned with salt and pepper, in 4 to 6 oz. BUTTER, on all sides. Remove pieces of chicken as they brown. Add: 1 cup ONION, chopped finely and 1 clove GARLIC, minced finely and cook until onions soften.
Blend in 2 Tbs. FLOUR. Add: 2 cups CANNED WHOLE TOMATOES, broken up by hand 1/4 cup SHERRY 1 Tbs. SALT 1 tsp. CRUSHED RED PEPPER.
Simmer covered for 45 minutes. Serve over rice.


Sopa de feijao Verde - Soup
(String Bean Soup)


Ingredients
1 1/2 quarts Water
2 tsp. Salt
1/2 tsp. Pepper
3 large Potatoes
2 medium Tomatoes
2 large Onion
1 Ib. Fresh string bean

Cooking Recipes Directions
In a 3-quart saucepan: Bring to a boil 1 ½ quarts WATER. Add: 2 tsp. SALT 1/2 tsp. PEPPER 3 large POTATOES, cut in chunks 2 medium TOMATOES, cut in chunks 2 large ONIONS, cut in chunks. Simmer for 30 minutes or until vegetables are tender. Puree through a sieve or food mill. (It should be a thin puree.) Add 1 Ib. FRESH STRING BEANS, cut across in thin slices. Simmer for about 10 minutes until beans are tender. Correct the Seasoning
Serve in bowls.

It will take a little time to slice the fresh string beans in very thin (straight-across) slices. As an adaptation and for the sake of speed, here's the fast modern version of this lovely soup:

Ingredients
1 cup INSTANT POTATOES
1 Tbs. ONION POWDER
1 1/2 quarts BOILING WATER
1 6-oz. can TOMATO SAUCE
1 package FROZEN ITALIAN BEANS

Cooking Recipes Directions
Combine: 1 cup INSTANT POTATOES 1 Tbs. ONION POWDER 1 1/2 quarts BOILING WATER 1 6-oz. can TOMATO SAUCE No pureeing is necessary.
Cut 1 package FROZEN ITALIAN BEANS (thawed) in thin slices. Add to the mixture above. Simmer until beans are done. Serve in bowls or large soup plates.
