Maldives
The Maldives were long a sultanate, first under Dutch and then under British protection. They became a republic in 1968, three years after independence. Tourism and fishing are being developed on the archipelago.

The Maldives is about 1.7 times the size of Washington, DC. The climate is tropical with a northeast monsoon (November to March) and southwest monsoon (June to August).

Recipes

Chilli Chicken with Cashew nut and Spring Onion - Main

Ingredients:
150 g Chicken
20 g Cashew
10 g Spring onion
5 ts Tomato sauce
2 g Capsicum
3 ts Oyster sauce
2 ts Chinese chilli sauce
3 dry chillies
100ml vegetable oil
2 ts sesame oil
75g corn flour
50g Carrot
1 egg
1 ts Sugar
½ ts Ajinomoto
½ ts Salt
Vegetable oil to fry
2 cups water

Directions
Season the diced chicken with salt, ajinamoto sesame oil, corn flour and egg.
Cut the spring onion, capsicum, and carrot in to stripes and slice the dry chilli.
Fry the cashew nuts and deep fry chicken with vegetable oil remove the chicken and cashew nuts from oil and empty the pan.
Heat the same pan and sauté the garlic, add the Chicken, tomato sauce, Chinese chilli sauce, oyster sauce and cook for 1 minute.
Add 2-cup water and cook for 1 min. season with salt, ajinomoto and sugar.
Add capsicum, carrot, spring onion and dried chilli and cashew nut.
Stir corn flour with 3 tbs water and pour to thicken.
Stir for some time and keep is aside.
Serve with rice.


Banana in Coconut Milk - Dessert

Ingredients:
4 cups thin coconut milk
1 cup Sugar
¼ ts Salt
3 Bananas cut diagonally in half

Directions
Pour coconut milk into a pot, add the sugar and salt. Bring to a boil; stir consistently to prevent the coconut milk from separating.
Add the bananas, bring back to the boil and then remove from heat.
Serve hot or cold.
