| Fattoush - Salad
(Lebanese Toasted Bread Salad)
Cooking Recipes Ingredients:
3 medium Tomatoes (about 1 lb)
3 pita breads (6 inch diameter)
4 cups romaine lettuce leaves, cut into 1 inch strips
2 cups peeled and sliced cucumber halves
1 can white tuna, packed in water, drained (6 1/2 oz)
1/2 cup feta cheese, crumbled
1/4 cup red onion, quartered and sliced
3/4 cup vinaigrette salad dressing, low or no fat
1 tbls parsley, chopped fresh
2 tsp mint leaves, dried, crushed
Cooking Recipes Directions
Preheat oven to 300°F. Use tomatoes held at room temperature
until fully ripe. Core tomatoes, cut into wedges (about 3
cups) and set aside. Cut pita breads in halves and then cut
each half into 8 wedges. Place on a shallow baking pan. Bake
until crisp, turning occasionally, about 25 minutes. Remove
from pan and cool. In a large bowl, place lettuce, cucumber,
tuna, cheese, onion, reserved tomatoes and pita wedges. In
a measuring cup, combine salad dressing, parsley and mint.
Pour over salad mixture. Toss until combined.
