Jamaica Cooking Recipes

Jamaica gained full independence within the British Commonwealth in 1962. Deteriorating economic conditions during the 1970s led to recurrent violence and a dropoff in tourism. Elections in 1980 saw the democratic socialists voted out of office. Subsequent governments have been open market oriented. Political violence marred elections during the 1990s.

Jamaica is slightly smaller than Connecticut. The climate is tropical, hot and humid with a temperate interior .

Cooking Recipes


Beef & Okra - Main
(Jamaican stir fry)

Cooking Recipes Ingredients:
2 lbs Beef, shoulder sliced thin across grain
2 t Salt
1 t Pepper
3 T Oil
1 Onion sliced thin
2 cloves Garlic minced or sliced
2 Tomatoes chopped
1 t Thyme
1 c Water or stock
1 lb Okra chopped

Cooking Recipes Directions
Mix beef, salt and pepper. Let set briefly, about 10 minutes, to season.
Heat oil on high heat in a skillet and stir-fry beef till browned yet still tender and moist. Remove to a plate.
Add onions and more oil if needed to hot skillet. Sauté until translucent.
Add garlic and continue sautéing till garlic is fragrant.
Add back beef and stir in tomatoes and thyme. Stir till heated through.
Stir in water or stock. Bring to simmer.
Simmer, covered, 10-15 minutes.
Add okra and simmer another 20-30 minutes.
Serve over rice.


Plantain Fritters - Snacks
(Jamaica fried plantains)

Cooking Recipes Ingredients:
2 Plantain ripe
1 t Baking powder
1 t or 2 t Salt or sugar
Oil for deep frying

Cooking Recipes Directions
Steam or boil plantain for about 15 minutes in its skin till soft.
Peel plantains and mash well. Cool.
Mix plantains with baking powder and salt or sugar (for savoury or sweet). Form into 1" balls with wet hands.
Deep fry in 375° oil till browned, about 4-5 minutes.
Drain on paper towels and serve.
