| Indonesian Peanut Chicken - Main
Cooking Recipes Ingredients:
4-6 skinned and boned chicken breasts
3 Tbsp olive oil
1 clove garlic, minced
1 small onion, minced
1-inch piece ginger root, minced
1 cup shelled, roasted, unsalted peanuts
1 Tbsp soy sauce
1 tsp turmeric
Juice of 1 lime
3 chili peppers or other hot peppers (minimum), minced
1 cup water
1 large onion, cut into rings
1 Tbsp olive oil

Cut chicken into small cubes. Sauté chicken in oil
until cooked. Remove from heat. In a blender, put garlic,
onion, ginger root, peanuts, soy sauce, turmeric, lime juice,
peppers, and water and blend until smooth. Put mixture in
double boiler, cover and cook until somewhat thickened (at
least 20 minutes).
Slice remaining onion into rings; sauté in remaining
oil until translucent.
Make rice. Mix chicken and sauce and serve over rice; place
onion rings on top.
This dish should be spicy. If not, add more peppers the next
time.
