| Pineapple Chicken
Rundown - Side Dish
Ingredients:
2 chicken or turkey breasts (boneless) seasoned with salt,
pepper & thyme.
90 g (3 oz.) pineapple chunks (preferably fresh)
180 ml (3/4 cup) Coconut Sauce
2 tbsp double cream
1 fresh pineapple, halved & scooped out
Directions
Grill chicken breasts for 8-10 minutes. Dice and heat together
with rundown sauce, pineapple chunks & cream. Serve in
the pineapple halves. This dish can be garnished with papaya
chunks and warmed in the oven if desired. Serve with mashed
potatoes.

Bananas
flambé - Dessert
Ingredients:
8 bananas
50 G of butter
1 sachet vanilla sugar
3 spoons with caster sugar
1 orange, squeezed
1 rum liquor glass
Directions
Bake bananas in frying pan with butter for 10 minutes, until bananas
peel. Add the vanilla sugar, the caster sugar and the orange juice.
Simmer for 5 min. Heat to boiling, add rum and flame. Serve immediately.
