Cooking Recipes Ingredients:
3 lbs. Snapper or Kingfish sliced in ½ inch slices
2 or 3 limes’ juice
1 Scotch bonnet pepper, sliced
2 c vinegar
½ c frying oil
1 tsp. All spice
2 large onions, sliced
½ teaspoon whole black pepper grains
4 teaspoons black pepper
4 teaspoons of salt
Cooking Recipes Directions
Wash fish thoroughly in water and limejuice and dry. Season
the fish with salt and black pepper and set for at least two
hours.
Heat the oil in frying pan and fry fish on both sides until
crisp, set fish aside in a deep Pyrex dish or other bowl.
In a saucepan, combine the vinegar, onions, peppers, pimento
seeds and whole black pepper grains, bring to a boil. Simmer
until onions are tender. Pour over fish and leave marinating
overnight.

Quick Fruit Cake - Dessert
Cooking Recipes Ingredients:
½ lb Butter
1 ½ c Flour
1 c Sugar
1 teaspoon baking powder
6 Eggs
1 c raisins
3 teaspoons bitters
1 c currants
1 tablespoon Vanilla
½ c mixed peel
1 c prunes
½ c Rum
½ c Port
½ c Whiskey
1 c Brandy
¼ c Colouring

The day before, put the dried fruits to soak overnight. Put the
fruits in blender to crush.
Cream the and sugar. Do not wait for sugar to dissolve completely
before adding eggs. Add eggs one at a time, add ½ of the
flour, B/P then fruit, add remaining flour, bitters, vanilla and
colouring. Grease and line tine before putting in batter. Bake in
a slow oven 300 degrees.
