Ghana Cooking Recipes

Formed from the merger of the British colony of the Gold Coast and the Togoland trust territory, Ghana in 1957 became the first country in colonial Africa to gain its independence. A long series of coups resulted in the suspension of the constitution in 1981 and the banning of political parties. A new constitution, restoring multiparty politics, was approved in 1992. Lt. Jerry RAWLINGS, head of state since 1981, won presidential elections in 1992 and 1996, but was constitutionally prevented from running for a third term in 2000. He was succeeded by John KUFUOR.

Ghana is slightly smaller than Oregon. The climate is tropical, it is warm and comparatively dry along southeast coast, hot and humid in southwest and hot and dry in north.

Avocado with Peanut Dressing - Salad

Cooking Recipes Ingredients:
2 avocadoes, ripe but firm
2 tbsp shelled peanuts
½ tsp paprika
½ tsp cinnamon
chilli powder and salt, to taste
fresh chives, to garnish

Cooking Recipes Directions
Chop the avocado into cubes. Place peanuts and spices in food processor and grind into a fine mixture. Sprinkle mixture over avocado with finely chopped chives. Chill and serve.


Hot Plantain Crisps - Snack

Cooking Recipes Ingredients:
4 plantains [should be firm]
4 tsp lemon juice
4 tsp ground ginger
4 tsp cayenne pepper
oil for frying

Cooking Recipes Directions
Slice the plantains into rounds 1/2-inch thick, and sprinkle lemon juice over the pieces, stirring to moisten. In a separate bowl, combine the ginger and pepper. Heat about 1/4 inch of oil in a heavy skillet until a test piece of plantain sputters. Roll plantain pieces a few at a time in the spice mixture to coat surfaces, then transfer to the skillet. Fry until outsides are crisp and golden. With a slotted spoon, remove plantains to an absorbent cloth [or paper towelling] for cooling [slightly]. Serve hot.
