Finland Cooking Recipes

Ruled by Sweden from the 12th to the 19th centuries and by Russia from 1809, Finland finally won its independence in 1917. During World War II, it was able to successfully defend its freedom and fend off invasions by the Soviet Union and Germany. In the subsequent half century, the Finns have made a remarkable transformation from a farm/forest economy to a diversified modern industrial economy; per capita income is now on par with Western Europe. As a member of the European Union, Finland was the only Nordic state to join the euro system at its initiation in January 1999.

Finland is slightly smaller than Montana. The climate is cold temperate and potentially subarctic, but comparatively mild because of moderating influence of the North Atlantic.

(Cauliflower Rye Casserole)

Cooking Recipes Ingredients:
1 cup beer
3 cups rye bread cubes (about 4 slices)
1 head cauliflower, cut into bite-sized florets
2 tbls butter
1 tsp caraway seeds
3 cups grated extra sharp cheddar cheese
4 eggs
1 tsp dry mustard
1/2 tsp ground coriander seeds
freshly ground black pepper to taste

Cooking Recipes Directions
At least an hour before cooking, pour the beer into a shallow bowl to sit until it becomes flat.
Dry the bread cubes on a baking sheet in a 300°F oven until they are crisp but not browned, probably about 15 to 20 minutes.
Sauté the cauliflower in the butter with the caraway seeds until just barely tender. Combine the bread cubes and cauliflower with the grated cheese. Spread the mixture into a buttered 2-quart casserole dish.
Mix the eggs, mustard, coriander, and black pepper in a blender or by hand with the flat beer and pour the mixture into the casserole dish.
Bake at 350°F for 30 to 45 minutes until puffed and golden.


Finnish Coffee Braids - Dessert

Cooking Recipes Ingredients:
2 1/4 cups water
1 pkg active dry yeast
1 cup sugar, plus 3 tbls
4 egg yolks
2 1/2 tsp salt
melted butter or margarine
1 tsp ground cardamom or 10 cardamom seeds, ground
2/3 cup non-fat dry milk powder
7 cups all-purpose flour

Cooking Recipes Directions
Sprinkle dry yeast in 105-115°F water in large bowl of electric mixer and add 1 cup sugar. Let stand for a few minutes then stir until dissolved.
When lukewarm, add 2 egg yolks, salt, 1/2 cup butter, the cardamom, and dry milk. Beat with electric mixer on low speed while adding 3 cups flour. (Or beat with rotary beater.) Add remaining flour or enough to make a stiff dough, mixing well by hand. Cover and let rise until doubled.
Roll out on floured board to rectangle 18 by 2 inches and cut into 9 strips 12 by 2 inches. Dough will be soft. Brush each strip with melted butter.
On lightly greased cookie sheet, braid 3 strips into a long (about 12-inch) coffee loaf. Repeat, making 3 loaves.
Bake in preheated hot oven (400°F) for 10 minutes. Remove from oven and quickly brush loaves with 2 egg yolks beaten with 1 tsp water. Sprinkle with remaining sugar. Bake in moderate oven (375°F) for about 15 minutes.
