Fiji Cooking Recipes

Fiji became independent in 1970, after nearly a century as a British colony. Democratic rule was interrupted by two military coups in 1987, caused by concern over a government perceived as dominated by the Indian community (descendants of contract laborers brought to the islands by the British in the 19th century). A 1990 constitution favored native Melanesian control of Fiji, but led to heavy Indian emigration; the population loss resulted in economic difficulties, but ensured that Melanesians became the majority. Amendments enacted in 1997 made the constitution more equitable. Free and peaceful elections in 1999 resulted in a government led by an Indo-Fijian, but a coup in May of 2000 ushered in a prolonged period of political turmoil. Parliamentary elections held in August 2001 provided Fiji with a democratically elected government and gave a mandate to the government of Prime Minister Laisenia QARASE.

Fiji is slightly smaller than New Jersey. The climate is tropical marine with only slight seasonal temperature variation.

Fijian Chicken - Main

Cooking Recipes Ingredients:
2 Chicken Breasts - bone and skinned
1 small onion - thinly sliced
1/2 teaspoon crushed ginger
1/2 teaspoon crushed garlic
1-teaspoon garam masala
1/2-teaspoon turmeric powder
1/4-cup chicken stock
1/2 glass of white wine
1 chopped tomatoes
1 teaspoon chopped cilantro
1/2-cup coconut cream
2 tablespoons cooking oil
1/2-teaspoon salt
1-teaspoon tamarind chutney
1/2 cup steamed long grain rice

Cooking Recipes Directions
Sautee onion, garlic, and ginger with the oil in a sauté pan, till a bit brown. Then add turmeric, garam, masala and the chicken breast. Sautee it for one minute, turning the breast over. Add chicken stock and white wine. Cover with the lid and simmer it for 10 minutes. You will notice the sauce thickening at this stage. Add coconut cream, salt and cilantro. Serve it over steamed rice with tamarind chutney.
