| Fijian Chicken - Main
Cooking Recipes Ingredients:
2 Chicken Breasts - bone and skinned
1 small onion - thinly sliced
1/2 teaspoon crushed ginger
1/2 teaspoon crushed garlic
1-teaspoon garam masala
1/2-teaspoon turmeric powder
1/4-cup chicken stock
1/2 glass of white wine
1 chopped tomatoes
1 teaspoon chopped cilantro
1/2-cup coconut cream
2 tablespoons cooking oil
1/2-teaspoon salt
1-teaspoon tamarind chutney
1/2 cup steamed long grain rice
Cooking Recipes Directions
Sautee onion, garlic, and ginger with the oil in a sauté
pan, till a bit brown. Then add turmeric, garam, masala and
the chicken breast. Sautee it for one minute, turning the
breast over. Add chicken stock and white wine. Cover with
the lid and simmer it for 10 minutes. You will notice the
sauce thickening at this stage. Add coconut cream, salt and
cilantro. Serve it over steamed rice with tamarind chutney.
