Dominica Cooking Recipes

Dominica was the last of the Caribbean islands to be colonized by Europeans, due chiefly to the fierce resistance of the native Caribs. France ceded possession to Great Britain in 1763, which made the island a colony in 1805. In 1980, two years after independence, Dominica's fortunes improved when a corrupt and tyrannical administration was replaced by that of Mary Eugenia CHARLES, the first female prime minister in the Caribbean, who remained in office for 15 years.

Dominia is slightly more than four times the size of Washington, DC. The climate is tropical with moderated by northeast trade winds and heavy rainfall.

Banana and Mango Bread - Bread

Cooking Recipes Ingredients:
1cup Butter
1 ¼ cup Packed Brown Sugar
3 Eggs
3 cups Self-raising flour
½ t Salt
½ t Cinnamon
¼ t Grated Fresh Nutmeg
1 ½ Mashed Ripe Bananas
1 Small Ripe Mango
1 cup Golden Raisins
½ cup Chopped Walnuts

Cooking Recipes Directions
The recipe says to use self-raising cake/pastry flour and the small ripe mango should be peeled and pureed.
In a bowl, cream the butter with sugar until fluffy; beat in eggs, one at a time, until incorporated. In another bowl, combine self-raising flour with salt, cinnamon and nutmeg. Combine mashed bananas with mango puree. Mix the dry ingredients and banana mixture, alternately, into the creamed mixture until batter is just combined; fold in raisins and nuts. Pour batter into 2 greased 8 1/2 by 4 1/2 inch loaf pans. Bake at 350 degrees for 50 - 60 minutes or until cake tester inserted in the centre tests done. Leave in pan for 10 minutes; remove form loaf pans and let cool on racks. Makes 2 loaves.


Cottage Pie - Main

Cooking Recipes Ingredients:
2 lbs. Potatoes, cut
2 tsps. Salt
4 tbsp. Butter
1 tbsp. Oil
2 cups Onion, chopped
1 cup Carrots, chopped
1 Garlic clove
½ cup Beef, grounded
2 tbsp Flour
½ teaspn Pepper
3 tbsp Tomato paste
10 OZ. Frozen Peas broth
2 Eggs

Cooking Recipes Directions
Cook potatoes and keep warm. Melt butter with oil in pan. Stir in onion and carrot. Sauté until brown, add garlic and sauté. Crumble beef in pan and cook until no longer pink. Drain off excess fat. Stir until well blended. Fold in partially thawed peas. Cook, stirring occasionally until thickened. Pour into un-greased baking dish. Mash potatoes. Beat in cream, nutmeg and remaining butter, salt and pepper until smooth and fluffy. Beat in eggs, one at a time. Spoon over meat filling. Bake.
