Denmark
Once the seat of Viking raiders and later a major north European power, Denmark has evolved into a modern, prosperous nation that is participating in the general political and economic integration of Europe. However, the country has opted out of European Union's Maastricht Treaty, the European monetary system (EMU), and issues concerning certain internal affairs.

Denmark is slightly less than twice the size of Massachusetts. The climate is temperate with humid and overcast windy winters and cool summers. 

Recipes

Cucumbers in Sour Cream - Starter

Ingredients:
½ cup sour cream
1 tablespoon sugar
1 tablespoon lemon juice
1 teaspoon salt
1 teaspoon sesame seeds -- optional
1 dash pepper
2 cucumbers -- sliced thin
1 small onion -- sliced

Directions
Mix first six ingredients together and pour over the combined cucumber and onion slices. Stir gently. Chill before serving.


Potato Dumplings - Side Dish

Ingredients:
2 cups potatoes -- grated
1/3 cup beef suet -- ground
3 eggs -- beaten
1 teaspoon salt
¼ teaspoon pepper
¼ cup milk
3 cups flour

Directions
Blend ingredients in order given and drop by tablespoonfuls into hot broth or soup and boil 45 minutes. Serve with meat or in soups.
