Chile
A three-year-old Marxist government was overthrown in 1973 by a dictatorial military regime led by Augusto PINOCHET, who ruled until a freely elected president was installed in 1990. Sound economic policies, first implemented by the PINOCHET dictatorship, led to unprecedented growth in 1991-97 and have helped secure the country's commitment to democratic and representative government.

Chile is slightly smaller than twice the size of Montana. The climate is temperate with desert conditions in the north, mediterranean in central region, cool and damp in south.

Chilean Christmas Bread from Chile - Bread

Ingredients:
2 cups SR flour
1 cup milk
1 teaspoon baking powder
100 grams glaced cherries
1 teaspoon cognac or brandy
1 cup plain flour
1 cup sugar
1 cup sultanas and chopped almonds (mixed)
1/2 cup glace fruit
2 eggs
115 grams butter
grated rind 1 lemon

Directions
Sift flour. Cut butter into pieces. Cream butter and sugar, add eggs and mix well. Add sultanas and almonds, glace fruit, lemon rind, vanilla, cherries, and cognac to flour. Mix well and pour into a buttered mould. Bake at 150 Celsius for 1 1/2 hours.


Escabeche De Gallina - Main
(Marinated Chicken)

Ingredients:
1 c Celery leaves
1/3 c Vinegar, wine
2 ea Parsley sprigs
1 t Salt
2 ea Cloves, whole
1 c Water, hot
1/4 t Thyme, dried
2 ea Onions - cut in rings
1/3 c Olive oil
1 ea Carrot - sliced
2 1/2 lb Chicken pieces
1 ea Leek - sliced
1 c Wine, white, dry
1 ea Lemon - cut in 8 wedges

Directions
Reserve a few celery leaves for garnish. Chop remaining celery leaves.Tie chopped celery leaves, parsley, cloves and thyme in small piece ofcheesecloth - set aside.
Heat oil in large saucepan - fry chicken in oil, a few pieces at a time until golden brown. Discard oil after frying chicken - wipe pan with paper towels. Return chicken to saucepan
In small bowl, combine wine, vinegar, salt and water. Pour over chicken ~ add onion rings, carrot, leek and bag of herbs. Cover and simmer 30 minutes - discard bag of herbs.Place cooked chicken pieces in a large bowl. Spoon of fat from cookingliquid. Stir cooking liquid, vegetables and lemon wedges into chicken.Cover and refrigerate 6 hours. Serve cold, garnished with reserved celeryleaves.
