| Rice With Olives - Side Dish

1 medium onion, finely chopped
1/2 cup oil
1 cup rice
3 1/2 cups water
3/4 cup pitted Mediterranean olives
freshly ground black pepper
Cooking recipes directions
Soak olives in warm water for 2 hours. Braise onion in oil
in large pan over medium heat. Add rice and stir for a minute
or two, until the rice is well covered with oil. Add the water.
After 8-10 minutes, add the olives. Finish cooking rice and
allow to cool to room temperature. Serve with freshly ground
black pepper

Spinach Zagora - Side Dish
Cooking recipes ingredients
1 pound spinach, washed, cooked and drained
2 tbls butter
1 clove garlic, minced
3/4 cup sour cream
1/2 cup coarsely chopped walnuts
3 tbls parmesan cheese
2 tsp chopped onion
salt/pepper
Cooking recipes directions
Combine all ingredients, well mixed, into a buttered baking dish.
Bake 30 minutes in a 325°F oven, and serve immediately. |
