Bulgaria Cooking Recipes

The Bulgars, a Central Asian Turkic tribe, merged with the local Slavic inhabitants in the late 7th century to form the first Bulgarian state. In succeeding centuries, Bulgaria struggled with the Byzantine Empire to assert its place in the Balkans, but by the end of the 14th century the country was overrun by the Ottoman Turks. Bulgaria regained its independence in 1878, but having fought on the losing side in both World Wars, it fell within the Soviet sphere of influence and became a People's Republic in 1946. Communist domination ended in 1990, when Bulgaria held its first multiparty election since World War II and began the contentious process of moving toward political democracy and a market economy while combating inflation, unemployment, corruption, and crime. Today, reforms and democratization keep Bulgaria on a path toward eventual integration into NATO and the EU - with which it began accession negotiations in 2000.

Bulgaria is slightly larger than Tennessee. It experiences cold, damp winters and hot, dry summers.

Rice With Olives - Side Dish

Cooking recipes ingredients
1 medium onion, finely chopped
1/2 cup oil
1 cup rice
3 1/2 cups water
3/4 cup pitted Mediterranean olives
freshly ground black pepper

Cooking recipes directions
Soak olives in warm water for 2 hours. Braise onion in oil in large pan over medium heat. Add rice and stir for a minute or two, until the rice is well covered with oil. Add the water. After 8-10 minutes, add the olives. Finish cooking rice and allow to cool to room temperature. Serve with freshly ground black pepper


Spinach Zagora - Side Dish

Cooking recipes ingredients
1 pound spinach, washed, cooked and drained
2 tbls butter
1 clove garlic, minced
3/4 cup sour cream
1/2 cup coarsely chopped walnuts
3 tbls parmesan cheese
2 tsp chopped onion
salt/pepper

Cooking recipes directions
Combine all ingredients, well mixed, into a buttered baking dish.
Bake 30 minutes in a 325°F oven, and serve immediately.
