Azerbaijan Cooking Recipes

Azerbaijan - a nation of Turkic Muslims - has been an independent republic since the collapse of the Soviet Union in 1991. Despite a 1`994 cease-fire, Azerbaijan has yet to resolve its conflict with Armenia over the Azerbaijani Nagorno-Karabakh enclave (largely Armenian populated). Azerbaijan has lost almost 20% of its territory and must support some 750,000 refugees and internally displaced persons as a result of the conflict. Corruption is ubiquitous and the promise of widespread wealth from Azerbaijan's undeveloped petroleum resources remains largely unfulfilled.

Green Gutab - Side Dish

Cooking Recipe Ingredients
Spinach-150g
Sorrel-150g
Spring onions 50g
Coriander / Dill-15g
Parsley-15g
Butter-20g
Egg-1/2
Wheat Flour-140g
Yogurt-50g
Salt/Pepper

Cooking Recipe Directions
Wash the greens, chop and stew with simmered onions.Add salt, pepper and mix thoroughly. Make tight dough with the addition of water, egg and salt. Roll the dough and cut out round pieces. Fold
the filling in dough in the shape of a crescent and roast both sides on a dry frying pan.When serving, spread some butter on each gutab.
Yogurt is served separately.

Dill Pilaf - Main
Serves 4-6

This recipe is easy to make, and can be made in less than an hour. A vegetarian recipe that can be made by using water instead of meat stock.

This dish from Azerbaijan is a complete meal as it combines beans and rice. The dill adds a fresh taste to the meal. Try with fresh tomatoes and cucumberr or plain yogurt.

Cooking Recipe Ingredients
2 cups of rice
3 T oil
4 cups beans
2 T margarine
1.5 cups water or meat broth
1 teaspoon flour
2 tablespoons lemon juice
1 bunch of dill
salt

Direction
Boil a lot of water (about8 cups), a pinch of salt and a few drops of oil, add the rice and when tender pour out the excess water. Put the strained rice in a pot sprinkle some oil on the rice. Set aside.
Melt the margarine and put into a saucepan with 1 1/2 glasses of water, flour, lemon juice, and a little salt, and mix. Pare the beans. Add to the saucepan, cover and simmer until cooked.
Take a heavy pot , Add 1 cup of water and steam the rice and the beans which you layer on top of the rice. Cook on low until the rice is fully cooked.
Chop the dill. Fold into the steaming rice and serve
